I have a stock 98 Pontiac trans am with the LS1 engine and all of a sudden the ECM is not reading the TPS & Coolant temp sensors. I noticed the wires at the connector for both sensors where in bad shape and striped so I replaced both connectors and checked the wiring harness for continuity and all checks out ok but the ECM still does not read the sensors. Could the striped wires cause a short in my ECM?

I doubt it. You just have an old deteriorating car.
Measure continuity between the sensors and ECM.
Check wiring harness grounds.
Check engine ground strap.
