750000 miles, Mercon fluid, torque converter plug and transmission pan drain plug. Fluid appears to be clean. Not sure if it was changed or flushed once before. Valvoline Dex/Merc appears toi be acceptable replacement. Should I service transmission? Should I drain torque converter?

I would leave the entire transmission alone. You're talking about a 22 year old truck with 3/4ths of a million miles. If you do a transmission fluid change on that car now, the transmission may slip and may have problems later.

typo 75000 miles on it It was rarely used

If that's the case, then change the transmission fluid and filter. Drain and refill but no flush. Save the old fluid after it's all drained out.
