Because of rough idle; I am getting ready to change out my idle air control and throttle position sensor. Do I just change them out? Do I need to worry about any programming or special procedure? Can I do both at the same time or should I have a week break in period between the two?

Well it's old enough that just replacing it after driving a day or two. They should just resettle and run fine by themselves unlike the new ones. Where you need reprogramming?
