I have a 2004 GMC Sierra 1500 2wd with the 5.3 engine with 187000 miles. Recently I've noticed that I'm losing oil between changes, this time 2 qts. I'm not seeing any oil on the ground or any smoke from the tailpipe. Where could my oil be going?

Modern catalytic converters do a good job of converting excess hydrocarbons into non-polluting exhaust - that's their job. The oil you're burning is getting "burned" by the catalytic converters - for now. hard to say how much longer, but not for too long.

Oil does not disappear. It either leaks or gets burned. Yours is getting burned, probably by getting past the rings or the valve stem seals or both.
