I am thinking about a new CX-5. I want all the safety features, and I want cooled leather seats. If I can't have those, I'll just keep my 2016 CX-5. But to get those, I have to buy some stupid stuff I do not want or need in my low mileage flat environment. Turbo + AWD or cylinder deactivation. What's the least evil of the combinations, or should I wait until 2022 or 2023 and hope somebody cuts the crap and stays reliable?

Just keep your 2016 CX-5 for another few years. With the money that you save, buy a Lexus and put an end to all your reliability concerns.
