Hey Scotty ! Is a 2007-2010 Lexus Es350 with over 100k-150K miles a good choice ? Will these lexus last to 300K if maintained well?

They can. It all depends on how it has been maintained and how it will be maintained.
Have a mechanic check into the one you are interested in and if he says it is in good shape, go for it. Good cars.

Yeah they can last but dont pay too much even if its a lexus its still a 10-13 yr old car

The early model years of that generation ES had more issues than the 2010-2012 ones. I'd try to find one of those, preferably an 11 or 12, since it's still somewhat new and will run for a long time. Also no timing belt on those.
