Engine temp issues

On a 93 ford thunderbird with 3.8L v6 with 269000km ,coolant temp stays low and fan blows cold. Till it’s cold, car will stall when taking off from a stop sign, but idle fine when parked. All of a sudden the temp guage with shoot almost to overheating then drops down and then heat blows from the heater and all is well at that point. Then the temp runs a little lower than normal temp wise but doesn’t stall or anything else at that point. Thermostat cycles and all is good till it cools off again. Is this sound like a coolant temp sensor, thermostat, or something else? Thanks

Well I would change the thermostat first because that's a moving part and they do break. And if it's not that then I'd replace the coolant temperature sensor
