How often do I need bleed brakes and/or change brake fluid? I was looking through the manual of my 2004 Toyota Prius, and it doesn't say to change it, ever! Am I missing something?

In manual for Auris is written every 2 years. On the other hand, in 5 years of ownership of 2002 Suzuki Swift I never touched it, neither my mechanic did.
Maybe you should check the owners manuals of other cars like for example Corolla because other owners manuals should have it. fwiw I checked out SUV's manual (for brake fluid change) and it just says inspect every 7500 miles under normal conditions and every 3000 miles under severe conditions. That sounds about right. You might also want to ask your trusted mechanic.
A good rule of thumb is to check it during regular oil changes, and expect to change it every four to five years. Signs that you should get your brake fluid checked immediately include fluid that has a burnt odor, is not clear or transparent. Some mfg. owners manual's vary widely. From none, to based on years, to based on mileage. I generally start thinking about it when it gets to 2 yrs. and after that every time I'm in the engine bay I check for any change of color etc... I don't let it get past 5 yrs.
