I was curious if the GDI system that Hyundai uses carbons up over time like Volkswagen's? I have a 2010 Genesis Coupe 3.8 with GDI and was curious about what is a good product to use for carbon build-up.

Yes they do.
The best you can do is purchase an oil catch can and install it. Plenty of info on them online and they can slow the build up, but not stop it entirely.
