2006 Ram 1500 coolant temp codes

I have a 2006 Ram 1500 4.7 with 233k miles. Sometimes the coolant temp sensor will fire a code while the Temp gauge reads below 50%. It has a new Mopar Coolant Temp sensor installed but continues to do this randomly. If I stop and restart the engine the code clears. If not the truck reacts and doesnt run its best. I havent been able to find any answers.

Thanks in advance for any help you can give me

You either have a bad temperature sensor (even though it's new) or a malfunctioning thermostat (it's 16 years old) or both.

What's the code? The computer expects a functioning thermostat to  keep a certain ECT (temperature) level.

A bad thermostat can trigger an ECT code when it isn't closing all the way and causes the engine to run cooler than the computer expects
