I finally got my first house so I can do my own oil changes. The dealer I always go to tells me they use Valvoline. Should I stick to that or does it matter as long as it is full synthetic and the right weight?

Valvoline makes a quality product, as do a number of other companies. I am sure that there will be a lot of discussion of which is best on this forum. IIRC Scotty uses Castrol, which is my favorite.
Fortunately, the American Petroleum Institute has grading standards which are printed on the containers to guide your purchases. See;

You might also want to do a coolant drain and refill, if that hasn't been done in a while.
It doesn't matter who makes the oil. What matters is that it is the correct weight and the correct API grade as Glen_set pointed out.
What if I switch to Pennzoil Pure Platinum. The one made from natural gas. Does that make a better difference?
it's doesn't matter. Just use whatever the manual tells you to. It all comes from the same place anyway.
