Hello,
I have 2016 Lexus RX 350 with 43k miles. It requires synthetic 0W-20 oil at factory recommended intervals of 10k miles.
A mechanic told me to do it once every 5k miles for the longevity of the engine. Should I believe him?

Yes - 10K miles is way too long a change interval.

Yes, every 5,000 miles or once a year whichever comes first.

Every 1 year/5k miles is the standard practice with full synthetic oil changes.
