I understand there are some cars where it is a good idea to replace tires in pairs, either the fronts or the backs. Something to do with transfer cases or transmissions.
But what about a 2004 Toyota Prius? Can I just replace one front tire, or do I need to replace both of the front tires?

Both especially if they are old. You don't want one tire that has more grip than the other one and might get you involved into an accident.

At least you don't have AWD where you need to replace all 4 at the same time!

Replacing in pairs will provide safer and more predictable handling and traction, IMHO.
