Yes, I overheated it. I just got it as a beater and the dash did not work and it overheated and I didn’t know. I tried to start it 15 min later and it didn’t even turn over. The headlights did not dim when I tried to start it but the fan and other interior lights went out when I was trying to start it. Dose the f250 have a temp sensor that would prevent it from starting

No no sensor will do that but you probably did lock up the engine get along extension bar and a sock and put it on the front crank bolt and if you can't turn the engine 360° it's locked up
Turns out it didn’t fully overheat the truck killed itself before it totally over heated and I found the wire that came off and now it’s fine
