Recently, the display on my 2013 Prius Plug-in started inverting color. Most of the time the colors will switch back to normal, but is beginning to stay inverted longer an longer. The vehicle just crossed the 100k mile marker but otherwise is running great.

Wow, that's a sure sign. Something is going wrong inside the dash module assembly. I don't know anybody who works on them other than just replacing the entire assembly
