I found a 2002 Nissan Pathfinder SE with 79k miles with a 4speed-automatic transmission, 4WD, and the 3.5L V6 for $4000. Would this be a good everyday driver?

Back then they were MUCH better made I wouldn't pay that much though around $2500 should be your goal if a mechanic says its in good shape.

I’d think twice before using an almost 20yr vehicle, as a daily driver. But if it checks out good by a professional mechanic, sure, you can try your luck.
Keep the price <$3000 owing to its age.
