Six cylinder not as smooth when cold outside

Why are old six cylinders not as smooth when it's cold outside? 

Why does it take so long to warm up and get past the wear point with these old engines?

This applies to the 2000 honda accord with 220k miles now and 94 r33 nissan skyline Gt with 117k KM.

How long is it taking for the engines to warm up? If it's more than 5 minutes/5 miles, you may have a coolant thermostat stuck open.

If the engine is warming up in a reasonable time, the sensor that tells the ECU the engine temp may be sending an incorrect signal.

Both those engines should run very smoothly at any non-arctic temperature.
