I drive a 04 dodge caravan and upon checking my front brakes the other day I noticed the drivers side brakes were almost metal to metal while the passenger side had maybe 25% or more life left. What causes this and what do I need to be checking? By the way when I changed the brakes last I did both sides at the same time.

Usually a case of a sticking caliper on one side.
Needs to be re-lubricated or just replaced.

Several things can cause this but the first place I would check is the slide pins. They often get neglected during brake jobs and they really should be lubricated every time the pads are changed.
