Dont know your problem .. I don't know if you can ever have radiator that to big ...

But if the temperature is not getting up to temperature I would suggest checking the thermostats in the bell housing.

@klob
I even checked the thermostat I even tried lowering it to a 160 and the engines not warming up fully or it would warm up fully and then when I start driving it was cool all the way down almost to quarter way and then it would set the sensor off just helped you at all then it would throw a code

I think it a bad sensor to the guage unless you live in a very very very climate.
Try this after u feel it running does the entire feel hot and warn.
Next does your heater work ?

Did you actually take a thermometer reading of the coolant or just looking at the dash gauge ?

Putting a low temperature thermostat will not make it run to proper operating temperature. That is supposed to be 190 degrees.

Dash gauges are not 100% accurate and they do fail, as does the wiring and sensor that feeds the gauge.

Fan staying on all the time ?  Bad wiring or sensor.

Radiator caps fail.
