My dad has a 2005 subaru impreza 2.5 with 101k miles and sometimes after sitting for a few hours or overnight when you go to start it the engine will crank and crank and crank and will eventually start but other times it will start right up. What could be causing this? failing fuel pump?

It could be. Did you already pressure test it? Have a look at the other potential causes too -
