I purchased a 1989 GMC Sierra 2500 with around 200K miles on it, and was told I should use a higher viscosity oil, in the engine, instead of the factory recommended 5W-30. What difference would it make on an older engine?

Don't.

The seller was probably using it to hide noises they didn't want you to hear. Or to slow down the leaks.

This is what it does in an older engine.
BTW: the car is 34 years old!! Does TS expect an 'as new' condition??
Hope the price for the car was related to that age (when's not a cherished oldtimer). 😆
