1995 F250 7.5L running rich?

Hi Scotty, 1995 F250 7.5L EFI with pre OBDII Ford ECC only 81,000+ miles. After 24 years my California catalytic converter plugged up and I temporarily removed it. The truck's exhaust now smells like it is running really rich. Plugs are clean and look medium to light tan and are pretty uniformed. No errors read from the ECC previous or current. Oil looks pretty good after 2500 miles and no odd smell. Truck idles smooth and performs well..... exhaust just smells really rich. I'm worried this may have been the original problem that plugged the cat. I don't want to install a new and "Highly Expensive" Calif cat just to have it plug up again. What do you think? Are these engine known for passing a lot of gas through without the cat so this is normal? Can't take it to mechanic 'cause can't drive it in Calif without cat.... Calif catch 22... BIG FINES. Thanks!

Yea, spot on about possibility of fuel clogging the cat.  

Replace the O2 sensor and after a decent drive cycle re-smell ;  )  Or take to mechanic that can sniff (analyze) exhaust gas (before and after O2 sensor replacement ideally).
