I just bought a 2007 Honda Odyssey with 282000 Mi. The previous owner only had the vehicle for 6 months. He didn't know if or when the timing belt was last changed. It runs great. Should I get the timing belt changed immediately because it's interference engine?

With that mileage, I would err on the side of caution and get it changed.
I'm not sure how the V6 engine is setup on the Odyssey.
I know on Honda Inline-4 engines, there is a cover at on the side of the engine which gives you access to the camshaft pulley. It's super easy to remove and inspect the Timing Belt. If there are cracks on the timing belt, definitely change it. So there might be a way to inspect.
BTW, if you do change it out, if the water pump and tensioner are part of the timing belt system, might as well change those too, since it's a PITA to change the timing belt.
