My 2008 subaru forester with 155k miles has oil leaking from the spark plugs. Does this mean I need to change the plugs and gaskets? Also the transmission fluid has never been changed and is not black, but darker in coloration. Should I change the fluid?

The oil is not leaking from the spark plugs (there shouldn't be any oil in the combustion chamber). That oil is seeping from the valve cover gasket around the spark plug wells. Your valve cover gasket just needs to be replaced.
Yes, you can change the transmission fluid.
