2011 Cadillac SRX 3.0 - AC is cool but not cold. I charged system to correct amount which is 1.61 lbs of freon.  The low side pressure is 30. The high side is 160 with a new compressor and new high pressure switch.  And it is still not cold.  The fan is working correctly.  The coolant level is not low.  The cabin air filter is clean.  The only thing I have not changed is the condensor and drier.  Any suggestions?

Those pressure readings sound too low on both sides of the system for a hot summer day.

If the old compressor failed and contaminated the system the condenser and drier needed to be changed along with the expansion valve or orifice tube, and everything else flushed out. Debris left in the AC system can quickly ruin a new compressor.

The coolant level is not low.

Your coolant and air conditioner completely separate systems. If your heat were not working, and it was set to max hot and it's at operating temperature, then you would suspect the coolant may be low.

I assumed he was using "coolant" to mean "refrigerant" (I've seen people do that), but that may not be the case. Refrigerant shouldn't be low if the correct amount by weight was put in unless some has leaked out already.
