Hey Scotty, online says my towing capacity is 11,000 pounds for my 2012 f150 eco boost. How accurate is that, and what is a safe weight that I could consistently pull without overworking my truck.

You have an Ecoboost engine which isn't the best. I wouldn't tow anything with that. Just use your truck for daily driving. Towing is for trucks with NA V8 engines.
While I generally agree with that assessment, that answer does not help OP. Of course, you can tow some weight with that engine without overtaxing it - it’s certainly not 0 lbs, but it’s also not the claimed weight by Ford.
I wouldn’t tow consistently more than 9k lbs on a stock half ton even with a V8. And that’s kinda pushin it too. The 3.5 eco has a lot of power, just comes with a cost. They chew through sparks and they need a hot soak now and then to keep things running smooth. You also have a 1st gen eco which is a hit or miss as far as a good motor. I disagree with @kesterpaul62 those ecos will tow. But as a said it comes with a cost.
