For awhile now I will periodically get a check engine light, but when I go and reclick the gas cap and drive my car for awhile, the check engine light will go off. I have replace the gas cap and it still happens. Now lately when my gas tank is empty and I fill it full the gauge will not register that gas has been added until once again I drive the car around for several miles and gradually the gauge will slowly go up and register the correct fuel amount. Is this the sending unit, or something else and how do I fix it, since the mechanic tried to tell me that it would cost me at least $1000.00 to repair, which I do not trust them.

Odds are you need a new gas tank sending unit that's not $1,000 job. Go elsewhere and see what they charge for such a job
