Starting the truck and driving it around even putting it in each and every gear seems normal. I even drive it around about 30 or so minutes. But once I turn the truck off it won't start right away. I do notice the engine coolant temperature gauge is not working so I was wondering if that coolant temperature sensor is not working if it could cause the truck to have to cool down before allowing it to start as some sort of preventative engine damage feature. The only code I get is P1289.

If you google that code it basically tells you that if the headers temp exceeds 310F then it will shut off the fuel injectors. My guess is your cooling system isn't working and its overheating. Check your coolant level first, make sure its not leaking.
