My wife's 2015 Volvo S60 T5 with roughly 80,000 miles seems to be consuming too much oil. She is consuming roughly 1 to 2 quarts a month under normal driving conditions. I don't visually see any smoke, no visible leaks. Not showing up in coolant either? Any suggestions?

Get a dry/wet compression test to see if it's the valve stem seals or piston rings or both.
Change the PCV valve and pray it helps, otherwise, you are likely looking at rebuilding the engine.
One more thing: you may try the oil cleaner Scotty used for releasing the piston rings. It might help with your situation. Do you know how often the oil was changed?

She is using synthetic oil and it is changed every 5000 miles plus all the addition quarts that seem to get consumed. LOL

Try changing the PCV valve and see if it helps, if not then do a wet/dry compression test and if your engine is on its last legs, then it's pretty much shot and it's not worth spending thousands rebuilding the engine. Ik those Volvo S60 T5's were known for excessive oil consumption, it's pretty common with that generation S60.
