Purchased a 2016 Mercedes C300 in 2019 with 21000 miles from a reputable dealer, today it has 56000. Changed the oil ever 5-6K miles like clockwork. 3 months ago the head gasket went (typical smoke and oil was creamy) on a very cold morning when we started to warm up. I put in Blown Head Gasket Repair (HG-1) and changed the oil same day and started to run fine, until a few days ago when it happened again again on a very cold day. I put in another bottle of HG-1 and changed the old, its better but still blowing a small amount of smoke.  With only 56000 what reason would cause the head gasket go?

reputable dealer

With very few exceptions the term "reputable dealer" is an oxymoron, as evidenced by them selling you a fairly late-model vehicle that quickly developed head gasket problems.

That stuff does not "repair" anything. It is a temporary band-aid at best, may not work at all, and can plug up cooling systems. It is a last resort, a nothing to lose effort to get a few more miles out of a worn-out old junker.

It probably had been overheated some time in the past and the "reputable dealer" may well have put some magical goop in the cooling system to mask the problem rather than doing a proper, and costly, repair.

It's a turbocharged 2.0L engine that makes 242 horsepower and 370NM - so failures like these are not too surprising, too much boost and generally these blocks and heads warp insanely easily.

Please go get it diagnosed and fixed correctly, It's a 2016 Mercedes, not a 1996 Buick - putting some crap into your anti-freeze/oil is not a solution - if anything it will only complicate things down the line.
