I just purchased a 2022 Toyota Prius Prime and I am pretty new to the world of owning Toyotas and especially new cars, used to beating down old cars till they were worthless and junking them
I am wondering what kind of maintenance items I should be looking to do for this car, assuming that I already know to change the oil every 5000 miles...

All of the insight you could possibly need can be found in your owner's manual that came with the car. Follow the manufacturer's suggested maintenance schedule and you will get the longest lifespan from your vehicle.
As ModMan said, follow the maintenance schedule in the manual.
I have a 2nd generation 2004 Prius since new, now at 305K+ miles. I just followed the maintenance guidelines in the manual, and so far so good.
