What prevents carbon buildup on the exhaust valves on these engines?

Well, if it's an older one that doesn't have GDI fuel injection, the fuel cleans the valves. But if it is a GDI engine, nothing prevents it because there's no fuel going on the intake valves. And if you have a bad PCV system than oil vapor gets sucked in and creates carbon on the valves
