Yo Scotty. I just rebuilt a 2003 Nissan 350Z with 140k miles on it and a manual transmission. I think it runs pretty darn well for a rebuilt with that many miles. I want to change the transmission fluid so it will last but people are telling me not to due to fear of it having problems if it’s never been changed for 140k miles. What do you think?

If you rebuilt it, how did you rebuild the transmission without draining the fluid?
I'd change it personally. The American cars are the ones you really have to watch when it comes to changing ATF for the first time at high mileage. You should be alright. But I'd drain and fill it myself....no flushing.
He said "Manual" transmission. That means gear oil, not ATF.

Ah ok gotcha.
I think the problems you heard about apply to automatics, not manual transmissions. I'm not aware of any issues changing gear oil.
