Hi scotty I'm looking to start a luxury car shuttle service and really like the infinity qx56, qx80 after 2015, being Japanese nissan base are they reliable? Also in regards to fuel, I read that premium is recommended for the infinity however the nissan armada has the same engine and 87 octane can be used in those any thoughts/ opinions are appreciated, I also the the sequoia but finding a used one with lower mileage is hard and usually above my budget.

No.
They will only be as reliable as your drivers. They don't pay for maintenance, you do. Infinity is basically Nissan and Nissan vehicles aren't reliable like they were with the X-Terra and older Altima models.
If you want to start a shuttle business, I recommend leasing the vehicles instead of buying, so you can have brand new cars. 2015 doesn't sound very luxury, just like you can't call a 2015 Cadillac luxury because it's a decade old. When people pay to be in luxury cars, they think 2022, 2023 at least.
