I have a 2017 GTI manual transmission, 26k miles with a Golf R IS38 turbo, intercooler swap, CAI, Magnaflow catback exhaust, and United Motorsports tune. I watched your videos on the ATS fuel / oil additive. I want to prevent GDI carbon buildup. Is this additive OK for a newer GTI such as mine? I can't find any info on the product in a newer VW. Car runs great, no CEL, no issues. Thanks!

Change your oil frequently. It's the truth. ATS 505 was specifically designed to be a cleaner, not a preventative. Using it as such doesn't make any sense.
It's your call as to whether you try it on a car that's has a carbon build up issue.
GDI engines build carbon on the valves. The only thing which fixes that is walnut shell blasting.
A PCV catch can may help prevent some of that.
