I'm thinking about buying a 2011-2015 GTI or Jetta with either the 1.8 2.0 or 2.5 engines. What are some common issues/maintenance items I should keep my eye on? also I heard about timing chain tensioner issues with some models. Id that only a prevalent issue on cars with timing chains before 2013? did Volkswagen fix it yet?

We’ve talked about VW products ad nauseam on this forum (if you do a search). In short, stay away from them especially out of warranty.

An old Beetle from the '70s was simple, they had air cooled engines. Modern Volkswagens are basically endless money pits. Once they're out of warranty, which everything of that era is, move on, unless you like spending lots of money on your car.
