I have another car that I'm looking at. It's a 05 corolla with 250k miles on it. It is in excellent shape despite its age and has been regularly maintained and cared for. Their asking for 2600. Should I buy this vehicle?

Only if a good mechanic confirms it's in good condition. Given the age and mileage I'd try to get it cheaper.
How cheap are we talking?
As cheap as possible - maybe between $2000 and $2500 in today's market. (Back in 2011 I bought a similarly old and high mileage vehicle for $1500 and I'm still driving it - but there's been quite a bit of market chaos and inflation since then.)
Also, the pre-purchase inspection may reveal some negotiating points to drive the cost down even more - or that you should run away.
