Is an 05ish chevy Colorado an overall reliable truck? If not what are good options for 5-8k that can tow at least 1500 lbs and are reliable

1) 2005 was not the best year (I think it was a new model 2004, and it took a few years to get it together).
2) with a vehicle like that, it is heavily, heavily dependent on how it was driven and cared for.
For sure, a Colorado will be much more affordable than a Tacoma of the same vintage, but you gotta be very careful to get a cherry.
