I have 2012 dodge caliber sxt do I need to drain the coolant before I change that sensor?

You don't have to.
But some coolant will inevitably spill out when you pull out the sensor. If you're clever and quick, maybe you'll only lose a few ounces which you can catch with something and then put back in.
Antifreeze should be replaced every 5 years, so maybe it's a good time to do it anyway.

Yes. And after refiling, burp the air from the system.
