Hey Scotty,
Cheap guy here. I'm looking to buy a 2007-2014 G350 or ES350 "IF" I don't buy a newer model Camry. Which model out of the GS350 and ES350 are the least and the closest to low repairs, maintenance and parts costs to the Camry of the same years?

Well, the ES350 (the ES line, really) is built on a Toyota Camry platform so if you want closer to the Camry in terms of cost you’d have to go with the ES350. Since it is a luxury car (Lexus), you still will pay higher in maintenance/repairs costs over time (including insurance) compared to the Camry, but less than the GS350.
