2015 VW Passat overheating

I have a 2015 Volkswagen Passat and it's overheating, I checked the coolant it stays at minimum, I've changed the sensors, but when I drive it for about maybe five minutes it starts to overheat then I have to pull off somewhere and wait for it to cool down to check and add coolant, I haven't found any leaks, but I noticed that one of the cooling fans comes on. I went and bought a new coolant reservoir and thermostat just incase if those are the problem. What should I do?

Overheating in 5 minutes is bad - most cars take 5 minutes to just warm up. It sounds like  you have problem where the coolant isn't circulating (could be caused by a stuck thermostat, clogged radiator, or bad water pump). Does the radiator get hot, or just the engine? 

If you are adding coolant, it has to be going somewhere - is it leaking or could it be a head gasket failure? Have you checked for oil in the coolant and coolant in the oil?
