I'm old school as I grew up with my Dad's 1964 Buick Wildcat 4 door sedan and really appreciate having room for my legs to stretch out.
Don't like all the current vehicles out there that you fit into a cockpit.
I like the looks of the Jeep Wrangler Rubicon but I understand that I should stay away from Chrysler products.
I thought maybe a 2021 Toyota Land Cruiser would be the way to go but how much work would it take and if it could be done to eliminate the center console to fit my needs ?

Maybe for modification would be the FJ Cruiser. They go for a pretty penny though used. And you can’t get them new. It is a pretty utilitarian setup.
Another choice might be the latest Suzuki Jimny, but you can’t get them in the US.
A quick search shows that unfortunately among the SUVs currently available the ones available with front bench seats are full-sized GM models. (Not exactly known as high quality items.) As far as modifying something new, no idea on that. I do know that on some models electronics such as USB ports and various electronic controls are integrated into the center console which would make removal a sporting proposition.
