Hi Scotty, enjoy your channel, have learned a lot from watching.  I bought a 2005 Saab 9-3 convertible 2 years ago. I now have 41,000 miles on it, yep 41,000 miles!  I don't know when the plugs, coolant, or trans fluid were  changed, would it be a good idea to do them now?  It is a 2.0 Turbo, what would be a good oil to use?

Yes, change them all. In the case of ATF, just drain and refill, do not flush it. 
For engine oil, follow your car manual and change it every 5k miles or once a year, whichever comes first.
