02 maxima 3.5 dies while driving BUT starts right back up, replaced fuel pump, sensors . WHY ??????

Check your battery terminals. If they are corroded or loose, they could lose contact while driving shutting down the car, then spontaneously come back on.
My fix was to shim the terminals.

Failing crankshaft position sensor or camshaft position sensor can do that, but you need live data to find out.
Which sensors have you changed so far?

Check the new cables. If the cables aren’t tight, it could cut off.
