I have a 1995 Pontiac Trans Am 305 4BB carb with 91K. The engine overheats at highway speed (red line). When I come back to local roads the engine cools down to around 200. I installed 3 row radiator with two 12" electric fans, a separate Transmission cooler with a 10" fan, new water pump and a 175-amp alternator for fans. No coolant loss or bubbles in radiator fluid. Could it be a bad temp sensor or clogged coolant passages in the engine? Please advise otherwise I will junk car. Frustrated!!!

You didn't say anything about a new radiator cap or thermostat.

For my Audi Avant Turbo Quattro AAN 1993, 93 degrees Centigrade (200 degrees F) shown on the coolant temperature gauge would be normal running temperature. Seen it reaching 215,6 F in hot summers, with no bad consequences at all. The car also has a separate motor oil temperature gauge, and Owners Manual virtually says I should only start worrying when the latter gets to the red line, while the coolant temperature may be anywhere as long as the coolant is not boiling (and it never did).
