I’m looking into a reliable sports car to fox up and maintain what kind of options are there? (Late 80s to mid 2000s)

"Reliable" and "sports car" don't mix. If you're looking for a project car, go for a Camaro or Mustang. If you're going for a collector's item, fox-body Mustang.

Assuming you’re planing to do it DIY
Toyota Celica, the older the better (the last gen does tend to have engine issues) make sure there are still parts for it.
Volvo C30 T5 manual - lots of fun, solid engines, not too much issues - but does require technical experience, make sure you have access to parts
I’d you’re willing to go newer - Maybe a 2nd gen Scion TC, those are decent enough.
All of these are sporty and reasonably reliable.
