I have a skin care company in NYC and am thinking about buying a used truck/van where I can showcase and sell my products in the back. 1-2 people need to be able to stand in the back (maybe 60 square feet with enough headroom like a Ford Transit).
I need something used, reliable and relatively affordable that can be driven with a normal NY driving licence...
Would you pick something like a smaller version Ford Transit/Mercedes Sprinter or maybe put a cabin on a Tacoma/Tundra/F150?

It depends on what you mean by relatively affordable. Vans cost more money. They contain a lot of metal.
Mercedes High-top Sprinter van would be the way to go.
The Ford Transit is cheaper, but it's only 6ft inside and not built as well.
Honestly just get a trailer that is made well and to the size you want and just get a good truck to pull it and you can keep the trailer forever and keep swapping out the truck.
