I am considering looking at an 06 Subaru outback with 75,000 miles on it. it has the 5 speed manual transmission, the 2.5l 4 cylinder engine. The head gasket and water pump and timing belt where just replaced too. Would anyone recommend this car ? what should I look out for?

The two main issues these cars have are covered in your case. I think it is good idea to check it out and if you like it, ask a mechanic to test it.
The biggest issues with Subaru's are their Automatic transmission from the era (which was Nissan made), and their old head gaskets.
Both are not an issues as head gasket replaced and manuel transmission.
If it's a price you are happy with test it out and have a mechanic check it out to see overall mechanical shape.
If condition is good, go ahead it could last a while, just don't pay much it's a 15 year old station wagon.
Rear wheel bearings.
Make sure all 4 tires are exactly the same diameter. Not talking the size marked on the tires...the actual physical dimension. The "all wheel drive" system is easily damaged if not.
