Can I use a 16" OEM Odyssey (2006) rim/tire (235/65R16) on a Ridgeline (2007) that has OEM 17" rim/tire (P245/65R17), and if so what size tire would I use ?

You'd have to make sure both cars have the same bolt pattern.

They do have the same bolt pattern and I meant to include that information in my original post.

If I had this problem, I would call tirerack.com, as their folks seem to have a lot of detailed info on tire offset, tire diameter, etc. They sell aftermarket rims, so they have a good handle on what fits what.
