Toyota Corolla why does my coolant temperature fluctuate

Scotty! A while ago I got a Toyota Corolla All trac. Bought it for 2800$ with 150k miles

it runs really well but I’ve ran into some heating issues.

it seems to go above halfway mark on idle and sometimes on highways (when it’s hot) I live in LA so the weather is always up . But when it’s cold at night it seems to run below halfway, it sometimes goes up above halfway at night when I’m going up a steep hill for after a short time. I don’t notice any white smoke from my tail exhaust, or loss of coolant either.

I did the following already 

new radiator, new thermostat, new water pump, multiple coolant flushes, new thermostat, new temp sensor, new fan switch. But it still seems to have the same issue, the car also has no ac and only 1 cooling fan which I’m guessing could be it? But I’m unsure if adding another electric fan would help.

Well that little bit of leeway I would not worry about it most of that is probably just from age and internal engine wear I would not worry about it at all as long as you're not losing coolant and it doesn't burn excessive amounts of oil
